Cake ball truffles


Hope everyone had a great weekend!  I capped mine off last night with a fun evening of catching up with my girlfriends and watching the SAG awards (err...red carpet).  For the occasion, I decided to finally try my hand at a cake ball recipe I've had bookmarked for a few months now.  These have become popular recently at several restaurants, including Momofuku Milk Bar, where I first tried them.  The birthday cake flavor they sell is probably the most delicious thing I've ever tasted, so I decided to go for that one.

I followed this recipe loosely, as it's open for flavor interpretation.  I used Funfetti cake mix and plain vanilla frosting for the base, with the only change being that I added extra sprinkles to the batter, since I remembered they were a crucial ingredient in making the Momofuku versions so delicious.

 

After baking the cake, I continued to follow the instructions for crumbling it, mixing in the frosting and forming my little truffle balls.  Instead of dipping them in chocolate, however, I decided to coat them with a cupcake-flavored "Magic Shell" topping, that I came across at the store.  It hardens when refrigerated, like the stuff you used to pour on your ice cream when you were little.

Once they were almost ready, I inserted these cute strawberry-frosted biscuits by Pocky, to be used as the serving sticks.  Next time, I definitely want to try making the cake, frosting and coating from scratch, but I just couldn't resist the ease and convenience of these yesterday, and the final product was still quite delicious.  They were the perfect Sunday treat!
