Hope everyone had an amazing long weekend! This summer has been so busy, it has been difficult finding time to blog–let alone bake–but luckily these cute and colorful cupcakes are deceivingly easy to make. I first made these for a friend's baby shower a few years ago and they've since become my go-to party treat when I want to bring something that's quick and easy to prepare, but will still impress.
To keep things as simple as possible I used store-bought vanilla cake mix and frosting, but if you're feeling ambitious you can make them from scratch as well. I prepared the mix according to the directions on the box (using egg whites only), then added small drops of food coloring to the individual cups of batter (making three cupcakes of each color per pan).
While the cupcakes baked I divided the vanilla icing into four bowls, again adding a separate food coloring to each. Once the cupcakes were cooled, I frosted them with their coordinating icing and fruit topping. To make the strawberry and pineapple hearts, I thin-sliced the fruit and stuck them the freezer for ten minutes, then used a sharp knife to cut the shape.
To take things up a notch you can also use flavored frostings, like strawberry or lemon, or try flavoring the vanilla icing yourself by adding some juice from each of the fruits. You can use this technique to flavor the batter as well. The result is a beautiful array of tasty, colorful treats–perfect for your next summer party!
